For a title in the biological sciences, can I write:


"Altitude- and sex-specific variations......"  or is the hyphen after altitude not necessary?

The hyphen is necessary.  It says that the word 'specific' applies to both, 'attitude' and 'sex', without having to repeat it.  The text within quotes is correct, according to me.
