I think Tom was using the single quote mark to indicate a contraction. If this is part of a trademarked brand name, its use is acceptable. Otherwise, mayo has entered the language as a word on its own and no longer do we have to show that it is a contraction.
The same with all caps. If this is not an advertisement, only the first letter of each part of the proper name is capitalized.
