do i have too much commas?
See example:
In August of 1993 I graduated from Centennial College, Ontario, Canada with a Nursing Diploma.

Actually, you need another comma -- following the introductory phrase that ends with 1993.
Also, the "of" in that phrase is not needed and can be removed.
"In August 1993, I graduated from ..."

No, this is absolutely correct. Many people often forget that a comma is needed after the name of the state as well as between the city and state (or in this case province). While you are not naming a city here the same rule applies. "Centennial College, Ontario, Canada with a nursing diploma" or "Centennial College, Ontario, with a nursing diploma" are both correct. Please not that you also do not need to capitalize nursing diploma as it is not a proper noun.
