Cymbals is a musical instrutment, so I must put an article 'the' before it? Correct?Can I write 'he played a pair of cymbals'?

You do not need an article because you already have another determiner. You would use one or the other, not both. Your example is a determiner phrase, the determiner is a in the phrase a pair of. There are many other determiners that can be used before a noun.
a pair of cymbals
the cymbals
his cymbals
your cymbals
those cymbals
different cymbals
many cymbals
