i've seen in longman dictionary that the word "ain't" means am not , is not, are not,have/has not, but what does it mean in this sentence. "old friend, why are you so shy?ain't like you to hold back or hide from the light" someone like you_adele

In this instance, the "ain't" stands for "it is not" -  Old friend, why are you so shy? / It is not like you to hold back or hide from the light. The singer is surprised by the friend's behaviour, which is unusually shy/quiet.
