Either could be correct, but they have different meanings.

We don't sing all day.

We are a group and get together to sing, but we don't spend the whole day singing. This version implies that we get together on a regular basis.

We aren't singing all day.

Our group is singing right now, but we won't continue to sing the entire day. This version doesn't imply more than today's session of singing.
