'Walk' is a noun in this sentence and means the activity which the man is doing. The article 'a' will be a clue that the word is being used as a noun.

The man went on a walk. Here, it's a noun.

The man walked his dog. Here, it's a past tense verb.

The man took his dog for a walk. Again, it's a noun.
