Which sentence is best? Is "once" used correctly?

The once doubtful and discouraged farmer became a military strategist, Israel’s 5th Judge, and was a member of the Faith Hall of Fame. 

 

 

A once doubtful and discouraged farmer, Gideon became a military strategist, Israel’s 5th Judge, and was a member of the Faith Hall of Fame.  

 

Note: I had mentioned earlier in the story that Gideon was a farmer.

Yes, once is fine.  You need to delete was, though.  (Then either sentence will work.)  You are listing three things he became: a strategist, a judge, and a member. You don't need the additional verb.
