The correct sentence is:

 

She likes pineapple more than he.

 

Or if you want it to sound less formal:


She likes pineapple more than he does.

Correct one is;

She likes pineapple more than he.

What you have written means that;

She likes pineapple more than she likes him.

The subject is She where in the sentence needs object her.

That is not correct. You have changed the gender of the second person. If the second person were female, it would still be "she" in this sentence. When there are two people in one sentence, you should not use the same pronoun for both of them. One of them would need a name or some other reference.
