What is the difference between the meanings of "Happy Valentine's Day" and "Happy Valentines' Day"?

Valentine's Day was originally to honor Saint Valentine (a singular person, hence the singular possessive). Over time, it has come to celebrate your love for your "valentine." Since there are many people who have a valentine, the plural valentines is appropriate when speaking of the many people who are loved -- hence the plural possessive Valentines' Day.
