Use of the verb "happen"

Why can't you say, "What happen when you eat too much?" The correct way to use it is, "What happens when you eat too much?" Why must it be "happens?"

'What' is the subject of 'happens'. 'What' is a third person pronoun (think 'it') and takes the third person form of the verb.
